Grillo grapes are harvested in early September. Grillo grapes are a "chameleon" grape because they can take on different characteristics. They also begin fermenting on their own shortly after harvesting. Therefore, grillo grapes are often harvested in the dark (early morning or late evening) and put into a cold soak immediately to slow down that process. Tonnino Grillo boasts sweet jasmine notes and a touch of honey with spicy fruit scents.
